Glycosylated Steviol Glycosides(GSG) is also called Enzyme Modified Stevia.
Enzyme-Modified Stevia (Glucosyl Steviol Glycosides or GSG) is a series of natural flavors with modifying properties (FMPs) made from stevia leaf extract. lt is affirmed as GRAS by 21 CFR regulation of the U.S. Food and Drug Administration (FDA).
Normal steviol glycosides product (economical ST90) has a slight bitter aftertaste. In order to improve the sweet taste, we grafted the glucosyl group to steviol glycosides through the catalysis of glucosyltransferase. Thus, the taste of GSG improves significantly. This process does not apply any solvents or processing aids not approved for use in food processing. GSG can be used as a sweetening flavoring substance and be widely applied in food and beverages. GSG is about 120-150 times the sweetness of sucrose, which is relatively low compared to steviol glycosides. However, it is still considered to be a good choice in sugar reduction products development since it is economic. GSG has stable properties, long shelf life, and is not easy to react with other substances, making it widely applied in many situations.
